Grain Free Mixed Muffins and Back to School Breakfast Club ideas!
My oh my how our breakfast has changed since the good old school days! Not gonna lie, I adored my sugar coated cereal and milk. Yup! I think every kid did (still does). But now, families are becoming more aware of the importance of REAL food for breakfast. Well, at least I like to think so.
Here are some great ideas for back to school breakfasts! I tried to focus on collecting easy meals that were protein rich and gluten free.

For us, breakfast is A MUST to FUEL our day or for recovery after those early morning workouts. I try to focus on good fat and protein most days in order to keep the blood sugar stable. Or good carbs and protein (like flapjacked!) for the post workout swims, etc.
But here’s the thing, I work from home, so I have the “luxury” of eating at home. Most do not, and most kids will be heading back to school soon and in need of a good breakfast to go! That being said, these muffins just might be do the trick for both at home meals (add some fruit and scrambled eggs) or on the go (along with an apple or banana)!

Description
Grain Free Mixed Nut Muffins
Ingredients
- 1/4 cup mixed nuts – I used some honey roasted vanilla cashews and a few brazil nuts.
- 1/4 cup almond meal or flour (you can buy this or just finely grind up raw or roasted almonds in food processor)
- 2 tbsp coconut flour (or other flour of choice)
- cinnamon
- 1 tsp stevia or other sugar of choice
- 1 tbsp. ground flaxseed or ground chia
- 1/4 cup egg whites
- 34 grams (1 serving) of vanilla protein powder
- dash of sea salt
- 1/2 tsp of baking powder
- 1/4 cup unsweetened applesauce
- couple tbsp of almond milk (optional)
Instructions
- Grind up your flavored nuts in blender or food processor. Mix them in with all other dry ingredients. stir in egg, unsweetened applesauce, and milk. Mix thoroughly. the batter will be thick and a little gritty. Add more milk if its too thick. Spoon into greased muffin tins.
- Bake at 350F for 10-12minutes

These taste like KIND bars all baked up in muffin form with protein. I love them with butter or even a little honey. Full of fiber (from flax/chia) and protein! Bam! I like that.
